A new masterclass designed exclusively for University Chefs working in higher education on Michelin starred dining will take place in November.

David McKown, Director of University Hospitality Seminars commented: "A fine dining menu will on occasions meet the needs of an institution's hospitality offer, and this course sets out to support chefs who are exclusively working in our sector."

Attendance is limited to eight chefs, and the masterclass takes place at Fischer's, a Michelin starred Restaurant in Derbyshire.

The masterclass will be led by Rupert Rowley who has retained the Michelin Star at Fischer's since taking the helm of the kitchen in 2003. In his career, Rupert as worked with John Burton Race and Gordon Ramsey.

A fine dining menu will on occasions meet the needs of an institution's hospitality offer, and this course sets out to support chefs who are exclusively working in our sector

The event will cover menu planning and culinary innovation delivered in a relaxed environment. David continued: "Chefs will not be asked to rattle the pans or spend time at the chopping board, the emphasis will be on taste, presentation and menu planning, in fact chef whites are not required."

However, chefs will be expected to contribute to discussions and debates around menu planning, meeting the needs of customers and the development of their team. Chefs will then put together action plans in order to apply the techniques and ideas generated from the masterclass.
